  • Step 1

    Preheat oven to 325°F.

    Use the 1 tablespoon butter to grease a 10-inch round baking pan. Do not use a springform pan or a removable-bottom tart pan.

    If using fresh cherries, pit them. If using canned cherries, drain them well. Arrange 1.5 cups prepared cherries evenly over the bottom of the buttered pan.

    In a mixing bowl, whisk together the 4 eggs and 1.25 cups milk until evenly combined.

    Add 0.25 cup granulated sugar, 0.5 cup all-purpose flour, 1 pinch salt, and 1 teaspoon vanilla extract. Add 1 teaspoon kirsch liqueur if using.

    Whisk the mixture thoroughly until the batter is smooth and no flour lumps remain.

    Pour the custard batter evenly over the prepared cherries.

    Bake at 325°F for 1 hour to 1 hour 15 minutes, or until the clafouti is lightly browned, puffed, and firm to the touch.

    Remove from the oven and allow it to rest briefly. It may be served warm or completely cooled; refrigeration before serving is not required.

    Dust the top with 2 tablespoons powdered sugar before serving.
