“Okroshka” is a cold soup made with diced vegetables and bologna, combined with a liquid base such as kvass, diluted kefir, or a mixture of diluted sour cream and plain yogurt. It is usually served during hot summer days and is especially refreshing in warm weather.
My family's favorite version is made with sour cream and plain yogurt. Sometimes we also make it with homemade kvass and add mayonnaise when serving.
