Want to try something different than regular pancakes? These pancakes are fluffy, wholesome, and delicious. Adding cottage cheese makes them delicate and somewhat hearty. You can top them off with any type of fruit you like—berries, bananas, kiwi, peaches, or anything else you prefer. You can choose from two homemade syrups or simply use real maple syrup.

In a mixing bowl, combine the whole wheat flour, white flour, baking powder, baking soda, and salt.

In a separate mixing bowl, whisk the eggs with the sugar, vanilla, oil, and cottage cheese until well combined.

Add the warm milk and mix well.

Gradually add the dry ingredients to the wet ingredients, mixing until combined.

Heat a skillet or griddle over medium-low heat and lightly grease if needed.

Combine the condensed milk and heavy whipping cream in a small saucepan.

Combine the water and dark brown sugar in a medium saucepan and bring to a boil over high heat.

Remove from the heat and whisk in the heavy whipping cream and optional cinnamon.

Serve the pancakes with either syrup, or combine both syrups together. Top with a dollop of cottage cheese and fresh berries or other fruit of your choice.
