Lagman is a hearty Uzbek vegetable noodle soup traditionally made with beef or lamb, vegetables, herbs, and noodles. There are many variations of lagman, with different types of meat, vegetables, and noodles. This is one of my favorite childhood dishes, a recipe that has been passed down to my family.
