Lamb is highly rated in our family—we absolutely love it, especially lamb shanks and chops. It is rich and flavorful, yet still delicate and mild.
Lamb Osso Bucco is a comforting and delicious Italian dish that is aromatic and full of flavor. The meat is first seared, then slowly braised in a flavorful sauce until tender and nearly falling off the bone.
“Osso buco” is Italian for “bone with a hole” and refers to the marrow in the center of the cross-cut shank. Cutting the shank crosswise exposes the rich bone marrow, adding even more flavor to the dish. You can prepare the shank whole or ask your butcher to cut it crosswise for you.

Heat a dutch oven or frying pan with oil.
- Step 2
Season the lamb shanks with salt and black pepper.
- Step 3
Sear the lamb on all sides until well browned. Work in batches and add more oil if needed.

Remove each browned batch from the pot and set aside.
- Step 5
Add the onion, carrots, and celery and/or fennel to the pot. Add more oil if needed.

Stir and sauté the vegetables for approximately 10 minutes.

Add the tomato paste, dried oregano, 2 crushed garlic cloves, and 5 whole garlic cloves.

Continue to sauté, stirring, for another 3 minutes.

Add the red wine, stir, and cook for another 1-2 minutes.

Add the tomatoes, beef or chicken broth/stock, bay leaf, salt, and black pepper.

Transfer the lamb shanks back to the dutch oven. If using a large baking dish, place the shanks in the dish and pour the sauce over them.

Arrange the rosemary and thyme sprigs between the lamb shanks.

Heat the oven to 350 degrees F.

Cover with foil and braise the lamb shanks for 2 hours.
- Step 15
Turn the shanks and continue to braise for another 1 hour.

Remove the foil and braise uncovered for another 20-30 minutes.

The meat is done when it is tender and nearly falling off the bone.

Serve over mashed potatoes, risotto, rice, or pasta with your choice of vegetables, and pour as much sauce over the lamb as desired.
