Directions

These macadamia nut waffles bring a taste of the tropics right to your breakfast table. Crisp on the outside, fluffy inside, and filled with sweet, crunchy macadamia nuts, they’re perfect for a special weekend breakfast. Top them with toasted coconut, fresh berries or tropical fruit, and a generous dollop of fluffy whipped cream for a delicious vacation-inspired treat. Whole wheat pastry flour can be substituted with regular all-purpose flour, or use a 50/50 combination of white and whole wheat flour.   • Step 1

    Preheat the waffle iron according to the manufacturer’s instructions.

  • Step 2

    Coarsely chop 1/2–3/4 cup macadamia nuts. If using pineapple or mango for garnish, dice them into bite-size pieces and prepare any berries or toasted coconut you want to serve with the waffles.

  • Step 3

    In a large mixing bowl, whisk together 1 3/4 cups whole-wheat pastry flour, 3 tablespoons ground flaxseed meal, 1/4 teaspoon salt, 2 tablespoons sugar, and 1 tablespoon baking powder.

  • Step 4

    Separate the 2 eggs, placing the yolks and whites in separate bowls.

  • Step 5

    Whisk the 2 egg yolks with 1 1/2 cups milk, coconut milk, or almond milk, 1/2 teaspoon vanilla, and 3 tablespoons coconut or vegetable oil.

  • Step 6

    In a clean bowl, whip the 2 egg whites until light and fluffy, then set aside.

  • Step 7

    Pour the milk-and-egg-yolk mixture into the dry ingredients and whisk just until combined.

  • Step 8

    Gently fold in the whipped egg whites and the coarsely chopped macadamia nuts, taking care not to deflate the batter.

  • Step 9

    Lightly coat both sides of the hot waffle iron with nonstick cooking spray. Scoop in enough batter for your waffle maker and cook until the waffles are golden and crisp.

  • Step 10

    Serve hot with whipped cream, syrup or pure maple syrup, and pineapple, mango, berries, toasted coconut, or additional chopped macadamia nuts as needed.
