    Carrots, Cooked And Diced
  • 12 piece
    Hard-Boiled Eggs, Diced
  • 1.5 lb
    Bologna, Diced
  • 10-12 piece
    Small Kosher Dill Pickles, Diced
  • 1/2 piece
    Sweet Onion, Finely Chopped
  • 1 can (15 oz)
    Sweet Peas, Drained
  • 3-4 tbsp
    Mayonnaise
  • to taste

This salad is very famous in Russian/Ukrainian culture. It’s a must on the New Year table. As always, there are different variations of this salad, and every family has their own recipe. It consists of diced potatoes, carrots, eggs, bologna, pickles, and peas, usually combined with mayonnaise. You can substitute bologna with cooked chicken or beef, use fresh cucumbers instead of pickles, or substitute sour cream for mayonnaise if you prefer. You can also use half mayonnaise and half sour cream without making much difference in taste.

  • Step 1

    Cook the potatoes and carrots until tender. Let them cool, then peel and dice the potatoes and carrots into small pieces.

  • Step 2

    Hard-boil the eggs, let them cool, peel, and dice.

  • Step 3

    Dice the bologna and pickles into small pieces and finely chop the sweet onion.

  • Step 4

    In a large bowl, combine the potatoes, carrots, eggs, bologna, pickles, onion, and drained peas.

  • Step 5

    Add the mayonnaise and gently mix until everything is evenly coated. Season with salt to taste.

  • Step 6

    Cover and refrigerate before serving. If desired, garnish or mix in finely chopped baby dill and green onions.
