  • 3/4 cup
    Sugar
  • pinch

    Vanilla Extract

Pastry cream is a classic cooked custard filling made with egg yolks, sugar, milk or half-and-half, flour, and vanilla. It can be used in cakes, tarts, pies, cream puffs, and other pastries, or folded into other creams for fillings and frostings.

Directions
  • Step 1

In a saucepan, whisk the egg yolks while gradually adding the sugar and salt. Continue whisking until the mixture is thick and pale yellow.

  • Step 2

Whisk in the flour until smooth.

  • Step 3

Gradually add the hot milk or half-and-half, beginning with a small drizzle and whisking constantly to temper the egg mixture.

  • Step 4

Place the saucepan over medium-low heat and continue whisking, slowly at first and then more vigorously, until the mixture comes to a boil.

  • Step 5

Reduce the heat and simmer slowly for 2-3 minutes, stirring constantly with a wooden spoon to cook the flour and prevent lumps.

  • Step 6

Remove from the heat and stir in the vanilla extract.

  • Step 7

Transfer the pastry cream to a bowl and cover the surface with plastic wrap to prevent a skin from forming.

  • Step 8

Let the pastry cream cool completely before using.

  • Step 9

Store refrigerated for up to 3 days.
