Roast Duck with Rice Stuffing

    Fresh Sage, Finely Chopped
  • 8-10 cloves
    Garlic, Crushed
  • 1 piece
    Orange, Juiced
  • 1/2 piece
    Orange Zest

    Olive Oil
  • 2 1/2 tbsp
    Salt
  • 1 tbsp
    Black Pepper
  • 2 tbsp
    Mayonnaise, Optional Marinade Substitute
  • 2 cups
    White Rice
  • 1 piece
    Carrot, Peeled And Shredded
  • as needed
    Sautéed Mushrooms, Optional

A sage-and-garlic roast duck with an orange and olive-oil marinade and a simple rice-and-carrot stuffing. For the alternate marinade described in the original recipe, use mayonnaise in place of the olive oil, orange juice, and zest, and reduce the salt slightly.

Directions
  • Step 1

    Combine the chopped sage, crushed garlic, orange juice, orange zest, olive oil, salt, and black pepper. For the alternate marinade, use mayonnaise in place of the olive oil, orange juice, and zest and use a little less salt.

  • Step 2

    Rub the marinade all over the duck, including inside the cavity.

  • Step 3

    Cover and marinate the duck for 8 hours or overnight.

  • Step 4

    When ready to roast, preheat the oven to 400°F.

  • Step 5

    Cook the white rice until partially cooked but not completely tender.

  • Step 6

    Peel and shred the carrot.

  • Step 7

    Mix the partially cooked rice and shredded carrot, seasoning with salt and black pepper. Add sautéed mushrooms if desired.

  • Step 8

    Stuff the duck cavity with the rice mixture.

  • Step 9

    Place the stuffed duck in a deep baking pan and add a little water to the bottom of the pan.

  • Step 10

    Cover the pan tightly with foil.

  • Step 11

    Roast for about 2 1/2 hours, or until the duck is cooked through and tender.

  • Step 12

    Remove the foil near the end of cooking and allow the duck to brown before serving.
