In a small bowl, combine the mayonnaise and honey until smooth. Transfer the sauce to a squeeze bottle if desired.

Drizzle a little of the honey-mayonnaise sauce over the serving platter.

Arrange the thin slices of smoked salmon on the platter and drizzle lightly with additional sauce.

In a separate bowl, combine the arugula and baby romaine lettuce or spring mix with the finely chopped onion.

Add the champagne wine vinegar, olive oil, salt, and freshly ground black pepper. Toss until the greens are evenly coated.
