Fluffy and fun sprinkle pancakes! What a special breakfast treat to surprise someone on their special day, especially if they like the usual breakfast Austin spots! These are completely made from scratch, with no cake mix or artificial ingredients (with the exception of sprinkles) and no hydrogenated oils. They are soft, melt-in-your-mouth pancakes with a white vanilla frosting syrup that tastes like actual birthday cake, and in my opinion, even better! Sift together the flour, salt, baking powder, and baking soda. In a separate bowl, whisk the eggs with the sugar and vanilla.

Add the milk or buttermilk to the egg mixture, then gradually whisk in the flour mixture.

Add the oil and melted butter and mix until the batter has a runny cake-batter consistency. Let the batter rest for 8–10 minutes until it becomes fluffy.

Gently stir in the sprinkles. Heat a pan or griddle over medium-low heat and lightly coat with nonstick cooking spray.

Scoop the batter onto the heated pan or griddle. Cook for 1–2 minutes, or until bubbles form on the surface. Flip and cook the other side.

For the Vanilla Syrup: Mix the softened butter, powdered sugar, and salt. Add the milk or cream and vanilla and stir until smooth. Microwave for about 15 seconds, or until the desired consistency is reached. Add more milk or cream if needed.
