These always bring back childhood memories. Occasionally, my mother would make them while we kids were still sleeping, and we would wake up to the sweet aroma filling the whole house. Syrniki are a Russian-style fried farmer’s cheese pancake. The outside becomes golden and crispy, while the inside stays creamy and warm. They are usually served with sour cream, but I wanted to do something a little different by using crème fraîche instead and pouring warm plum sauce over the top.

- Step 1
Beat the farmers cheese, sugar, eggs, and vanilla together until well combined.
- Step 2
Gradually add 1/2 cup all-purpose flour and the baking powder, mixing just until a soft cheese mixture forms.
- Step 3
Place a little extra flour on a plate or shallow dish for coating.
- Step 4
Shape the cheese mixture into small cakes, then lightly coat both sides of each cake with flour.
- Step 5
Heat a thin layer of oil in a frying pan over medium heat.
- Step 6
Fry the syrniki in batches until golden brown on both sides and cooked through. Transfer to a plate and keep warm.
- Step 7
For the plum sauce, combine the sliced plums and sugar in a small saucepan and bring to a gentle simmer.
- Step 8
Cook the plums for about 5 minutes, stirring occasionally.
- Step 9
In a small cup, stir the cornstarch and water together until smooth.
- Step 10
Pour the cornstarch mixture into the simmering plums and cook for about 1 minute more, stirring until the sauce thickens slightly.
- Step 11
Arrange the warm syrniki on a serving plate, spoon the hot plum sauce over them, and add a dollop of creme fraiche or sour cream.
