Directions
  • Step 1

    Preheat the oven to 350 F and line and grease a round cake pan.

  • Step 2

    Whisk flour, baking powder, and salt. Beat egg yolks with most of the sugar until pale, then mix in milk and vanilla and fold in the dry ingredients.

  • Step 3

    Beat egg whites with the remaining sugar to stiff peaks and gently fold them into the batter in batches.

  • Step 4

    Bake for about 30 minutes, until a tester comes out clean, then cool completely.

  • Step 5

    Mix evaporated milk, condensed milk, heavy cream, and optional rum.

  • Step 6

    Whip the frosting cream with powdered sugar until stiff.

  • Step 7

    Split the cake into two layers, pierce the first layer, and slowly drizzle with half the milk mixture. Spread with cream and raspberries.

  • Step 8

    Top with the second layer, pierce and soak with the remaining milk mixture, then frost the top and sides and decorate as desired.
