These healthy, wholesome banana pancakes are a delicious twist on traditional pancakes. They’re moist and fluffy, with a subtle nutty flavor and plenty of nutritious ingredients. Made with spelt or whole wheat flour, chia seeds, and flaxseed meal, they’re a wholesome and satisfying way to start the day. I use chia seeds and flaxseed meal often and love adding them to cereal, yogurt, oatmeal, porridge, muffins, pancakes, waffles, and more. These pancakes make a delicious, guilt-free breakfast that’s packed with wholesome ingredients.  You can replace the 1 1/2 cups spelt flour with 1 cup flour + 1/2 cup oat bran. The raw cane sugar can be omitted or replaced with honey or another preferred sweetener, and regular granulated or brown sugar can also be used.   • Step 1

    If using the optional 0.5 cup walnuts, chop them into small pieces.

  • Step 2

    In a large mixing bowl, combine 1.5 cups spelt flour, 0.33 cup ground flax seeds, 0.25  cup chia seeds, 1 tablespoon baking powder, 0.25 teaspoon salt, and the chopped walnuts if using.

    In a separate bowl, use a hand mixer to beat 2 eggs, 0.25 cup raw cane sugar, and 2 overripe bananas until well combined.

  • Step 4

    Gradually add 1.75 cups milk and 1 teaspoon vanilla to the banana mixture and mix until smooth.

  • Step 5

    Add the dry ingredients to the wet ingredients and mix until well combined and no large lumps remain.

  • Step 6

    Heat a skillet or griddle over medium-low heat and lightly coat it with some of the 2 tablespoons oil, adding more as needed between batches.

  • Step 7

    Scoop portions of batter onto the hot skillet using an ice cream scoop or similar measure.

  • Step 8

    Cook until the bottoms are golden brown and the tops begin to set, then flip and cook the other side until golden brown and cooked through.

  • Step 9

    Serve the pancakes warm with pure maple syrup or homemade syrup as needed.

    Add fresh fruit or berries as needed. If desired, also top with whipped cream as needed or cottage cheese mixed with condensed milk as needed.
