Buttermilk pancakes with blueberry sauce
These pancakes are an alternative to pancake mix in a box or frozen ones.its probably one of the kids, and not only kids favorite breakfast foods.
1 cup buttermilk
½ cup milk
¼ cup oil
3 eggs
1 teaspoon vanilla
1 teaspoon baking powder
1 teaspoon baking soda
½ cup sugar
¼ teaspoon salt
2 cups whole wheat pastry flour or white flour
Blueberry sauce:
2 cups frozen or fresh blueberries
¼ cup sugar
1 cup freshly squeezed or store bought orange juice
zest of  small key lime
1 squeezed key lime juice
1 tbls. Corn starch
in a bowl using hand blender mix buttermilk,milk,sugar,eggs,oil and vanilla.in a separate bowl mix the remaining dry ingredients and add to the buttermilk mix.
Let it sit, start making the sauce( it needs to cool down a little)
In a small pot on med-low heat  cook blueberries with sugar until sugar desolves, while its  heating up mix together orange juice, lime juice, and lime zest with starch, then add to bluebberies and cook for 1-2 minutes. Let it cool slightly.
Arrange pancakes in a plate., pour the sauce over pancakes , top it off with whipped cream. Enjoy!

  1. tried this recipe, doesn’t have cooking instructions for the pancakes. otherwise they turned out ok. i think i need to use less flour next time. they seemed a little heavy for us. I don’t have cake flour, used canadian flour, maybe that’s why?

      This recipe doesn’t call for cake flour,its whole wheat pastry flour and it is different from regular whole wheat.Canadian flour has a slight difference from regular all purpose flour.Just adjust the amount depending on the flour you use.
