Crepes or “blinchiki”are very popular in Russian/Ukrainian cuisines.They are very versatile with variety of fillings and are perfect for breakfast,brunch or served as a dessert at parties or any type of gatherings.
Ingredients
- Batter:
- 2 1/2 cup sifted flour
- 2 cups milk
- 1 cup water
- 6 eggs
- 1 stick butter melted (1/2 cup or 4 oz.)
- 1/3 cup sugar
- 1/2 teaspoon salt
- Filling:
- 8 ozs. cream cheese
- 1 cup ricotta cheese
- 1 cup farmers cheese (tvorog)*
- 1 1/2 cup powdered sugar
- 1 teaspoon vanilla extract
- 1 egg
- *you can substitute with mascarpone cheese or cottage cheese(drained)
Instructions
- Batter -Combine all the ingredients using a hand blender/mixer.Place the batter in the fridge for at least an1 hour and up to 48 hours.
- Filling- In a mixing bowl,beat all the ingredients using a hand/stand mixer.
- Heat a non-stick pan on medium-low heat.
- Spray with cooking spray or coat with butter.
- Pour about half of ladle to the pan and swirl around the pan evenly.
- Cook for about 30 seconds and flip.Cook for another 10 seconds.
- Spread the filling all over the crepe.
- Roll it up and cut it in half.
- Melt about 2 tablespoons butter in a skillet.
- Add rolled crepes to the skillet.
- Saute them until well browned on both sides.
- Serve with dollop of sour cream or fresh strawberry sauce.
