Black Bean Salsa

My family loves this salsa especially during summer time. It’s really simple to make and great for potlucks.You can even eat it as a salad, just add some chopped romaine or iceberg lettuce.

Ingredients:
1 can corn
1 can black beans,rinsed and drained
1/2  red onion finely chopped
1/3 cup extra light olive oil
1/3 cup fresh lime juice ( about 2 limes)
1 cup chopped tomatoes
1/2 cup chopped green onions
1/3 cup chopped fresh cilantro
2 avocados,halved,pitted,peeled and diced
1 teaspoon  ground cumin
1/4 teaspoon cayenne pepper (optional)
salt and pepper

Directions:

Mix all the ingredients (except avocado) to combine.
Gently fold in avocado.
Serve with tortilla chips.
