These stuffed mini peppers are a quick and easy appetizer or snack. No cooking or baking required. Just mix the chicken filling and stuff the peppers. It’s really easy to make and delicious!

 

Ingredients: 

1 canned white chicken

1 cup shredded colby jack or cheddar cheese

2 cloves garlic crushed

1/2 teaspoon garlic powder or garlic parsley seasoning

1/2 teaspoon onion powder

4 ozs. cream cheese

2-3 tablespoons mayonnaise

* green onion,parsley, or dill (optional)

 

Directions:

Mix all the ingredients together using a kitchen aid or hand blender.

Homemade Nacho Cheese

Silky smooth homemade nacho cheese with no processed velveeta cheese. Very easy to make with minimal and simple ingredients. You can adjust the heat of nacho cheese sauce by using only peper jack cheese for hot,cheddar cheese only for mild, and  both cheeses for medium. You can also add jalapeños for extra hot. Serve it as a dip with tortilla chips, pour it over chili or chili cheese fries ( one my favorite junkies in my teen years ).

 

Ingredients:

4 oz. pepper jack cheese,shredded

4 oz. cheddar cheese, shredded

1 tablespoon cornstarch

1 (12 oz.) can evaporated milk, divided

2 teaspoons hot sauce

pinch salt

Directions:

In a medium-sized saucepan,toss together cheese and cornstarch,  until evenly coated.

Stir in 1 cup evaporated milk, the hot sauce and salt.

Cook, stirring often, over medium-low heat until thickened, smooth and bubbly.

Stir in additional evaporated milk, if needed, until desired consistency.

These tomato cheese appetizers are  delicious,quick and easy to make.My moms garden has been in abundance of ripe red tomatoes,so I’ve been using tomatoes in many different ways.This appetizer is very well known among Slavic people,I twisted a little by adding sliced hard boil egg.

 

Ingredients:

tomatoes sliced

mozzarella cheese shredded

mayonnaise

hard boiled eggs sliced

salt and black pepper if desired

dill for garnish

 

Directions:

Combine garlic and mayonnaise.

Spread mayo mixture on tomato slices.

Sprinkle with cheese.

This Flatbread pizza recipe is a quick and easy meal to make especially when your day seem to be very hectic to spend a lot of time in the kitchen.You can choose from variety of breads, sauces, and toppings.You can also make your flatbread pizza from naan bread,pita bread or plain any other choice of flatbread.Wheat,white, or gluten-free type.Sauces are versatile as well,marinara,pesto,alredo, or plain olive oil garlic spread.

 

Ingredients for vegetable pizza as pictured above:

whole wheat naan bread

mozzarella cheese shredded

bell peppers diced

sun dried tomatoes

fresh tomatoes diced

green onions chopped

feta cheese or parmesan cheese

Spread:

1/3 cup olive oil

Combine spread ingredients in a small bowl. Spoon or brush it on the flat bread.

Eggplant sandwich

 

This is a gourmet toasted vegetarian eggplant sandwich with pesto,sundried tomatoes, broiled bell peppers and cheese. These sandwiches are perfect for any time of the day and are good to pack for lunch or enjoy at a picnic on a beautiful warm sunny day.

 

4-6 Sandwiches

Bread of choice ( I used torta bread from Costco this time)

1 Eggplant sliced 1/2 inch thick.( peel or no peel)

1 red bell pepper

1 green bell pepper

4-6 slices of cheese like Havarti,fresh mozzarella,provolone,monterey jack.

1-2 avocados sliced

pesto sauce

sundried tomatoes or fresh tomato sliced

2 eggs

1/2 cup panko crumbs

salt

oil for frying

 

Direction:

Season Eggplants with salt on both sides and arrange on a baking sheet or large tray.Let them sit for 10-15 minutes.

Heat oven to broil.Cut sides of the bell peppers to equal four pieces.Broil peppers until the skin is charred.Remove charred skin.

In a bowl whip eggs with whisk or fork.

Heat a skillet or a frying pan on medium heat.Add about 1/4 cup of oil.Dip each eggplant round in egg, then in panko crumbs.Fry both sides and transfer on a plate lined with paper towel.

Heat oven to 500 degrees.

Spread pesto sauce on one side of the bread.Add a little amount of sundried tomatoes (if desired).Place 1 slice of cheese and 1-2 tomato slices (if not using sundried)  on each sandwich half.

Arrange sandwiches (top and bottom piece) on a baking sheet. Toast the bread until cheese is melted.

Place avocados on top of the cheese followed by eggplants,and bell peppers.

Broccoli Salad

Ingredients

  • Salad-
  • 4 cups broccoli florets
  • 3 green onion sprigs chopped
  • 6 radishes cut in half and sliced
  • 1 small cucumber cut in half and sliced
  • 2 hard boiled eggs sliced
  • 1/2 cup shredded cheddar or Colby jack cheese
  • Optional-1/2 cup LA ChOY chow mein noodles
  • Dressing:
  • 3 tablespoons mayonaisse
  • 3 tablespoons sour cream
  • 3 tablespoons olive oil
  • 2 garlic cloves crushed
  • 1 tablespoon dill chopped (optional)
  • salt and fresh ground pepper.

Instructions

  1. Combine all the ingredients for dressing.
  2. Mix all the ingredients for the salad with the dressing.

These potato pancakes are delicious! And with just few ingredients it’s really simple and easy to make.This recipe is perfect to use left over mashed potatoes or you can cook up fresh mashed potatoes.I like to make them with fresh chives and cheddar cheese, coated with breadcrumbs for crispiness,pan fried and served with a dollop of sour cream.

Mashed Potato Pancakes with Chives and Cheese

Ingredients

  • 4 cups mashed potatoes
  • 1 egg
  • 5 tablespoons flour
  • (4 ozs.) or 1 cup cheddar or Colby jack cheese shredded
  • 3 tablespoons fresh chives chopped
  • breadcrumbs or flour.
  • oil for frying

Instructions

  1. Combine egg,flour,chives,and cheese with mashed potatoes.
  2. Shape the potato mixture in to patties.
  3. Dredge patties in breadcrumbs or flour.
  4. Heat a skillet.
  5. Add oil about 2-3 tablespoons.
  6. Fry potato pancakes on both sides for about 3-4 minute or until well browned and crispy.
  7. Fry in batches and add more oil as needed.
  8. Enjoy with dollop of sour cream.

DSC_3163Combination of tomatoes and eggplants is very popular in russian and Italian cuisine.They go perfectly together.This salad is delicious and simple to make consisting of  few ingredients.

Ingredients

  • 1 eggplant diced (large)
  • 2 cups grape or cherry tomatoes
  • 1 cup grated mozzarella or colby jack cheese
  • 4-5 cloves garlic crushed
  • 2-3 tablespoons mayonnaise
  • salt
  • fresh dill chopped
  • oil for frying or baking

Instructions

  1. Sprinkle eggplants with salt and set aside for 30 minutes.
  2. Fry or bake eggplants until you get a nice golden brown color.
  3. Let them completely cool down.
  4. In a bowl,combine eggplants,tomatoes,cheese,garlic and mayonnaise.
  5. Transfer to a salad bowl and sprinkle with dill.
