This salad is almost everybody’s favorite.It’s healthy and the color is very vibrant.It’s usually done with homemade sour cabbage (Sauerkraut) but some people make it with store bought, and say its still good. This salad is great for parties because it can be done day ahead,and it tastes even better.
3 potatoes cooked in skins,peeled, and diced (small)
6-7 medium beets cooked,peeled, and diced (small)
6 kosher dill pickles diced
1 onion diced (small)
15 0z.can peas
15 oz.can kidney bean
2 cups sour cabbage (I like to add even more)
1/4 cup unrefined sunflower oil
salt to taste
Combine all the ingredients with oil.Refrigerate.
